Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apricot jam
Provides the main fruit flavour, sweetness and body of the cream.
Thick cream
Whipped to a froth, it lightens the texture and adds richness.
Egg yolks
Add richness and help bind the mixture into a smooth, creamy texture.
Isinglass
A gelatine-like setting agent that firms the cream so it holds its shape when turned out.
Bitter almonds
Add a nutty, aromatic flavour that complements the apricot.

The step that matters

Gently stir the whipped cream into the jam mixture. Whipped cream holds air in its fine bubble network. Vigorous stirring knocks that air out, so the cream loses volume and the finished dessert turns out dense rather than light.

Swap the apricot

How well each one fits the dish's main ingredients (almond, egg, cream, sugar):
