A Wafer Basket

Ingredients

Directions

  1. Boil sugar until it reaches barley sugar consistency.

  2. Lay four yellow wafers flat on a dish in a diamond shape, using sugar to make them stick.

  3. Add four red wafers on top, sticking them with sugar.

  4. Repeat with four more yellow and four more red wafers.

  5. Place ratifeas against the ends of the wafers to hide the joins and decorate with flowers.

  6. Fill the basket with custard, cakes soaked in wine, and whipped cream, or meringues, French pastry, or sweetmeats.

  7. For a change, you may stick the wafers on their ends.
