Preserved Damsons

Ingredients

Directions

  1. Prick the damsons four or five times near the stone.

  2. Boil enough clarified sugar to cover the damsons for five minutes.

  3. Add the damsons and simmer gently until all the juice is extracted.

  4. Transfer the damsons to a bowl or pan.

  5. The next day, strain the syrup and boil it until thick.

  6. Add the damsons back to the syrup and simmer for one to two minutes, skimming off any foam.

  7. Pack the damsons into pots and let them cool.

  8. Once cool, cover with papers dipped in brandy or apple jelly.
