Bean or Almond Bread

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the almonds

  1. Blanch the almonds in cold water without peeling them.

  2. Slice the almonds.

  3. Sprinkle the sliced almonds with sugar.

  4. Stir to prevent sticking.

  5. In an earthen bowl, mix the almonds with caraway seeds.

Make the dough

  1. Add dissolved gum-dragon in rose water, musk, ambergris, and the frothy egg mixture.

  2. Stir in the fine flour until well combined.

  3. Lay the mixture on wafers.

  4. Shape the mixture like macaroons.

  5. Open them with a knife to prevent sticking.

Bake and finish

  1. Place in a preheated oven at 400°F (200°C) and avoid scorching.

  2. Halfway through baking, remove and wash with egg white.

  3. Sprinkle with sugar.

  4. Return to the oven for about 30 minutes until done.

  5. Cool before storing.

What each ingredient does

Almonds
Form the bulk of the dough, giving the bread its body and nutty flavour.
Sugar
Adds sweetness and, on the surface, helps form a crisp, lightly browned crust.
Eggs
Bind the mixture and add moisture and structure as they set in the oven.
Fine flour
Gives the dough enough body to hold its shape and bind the almonds.

The step that matters

Baking with the egg white wash at the halfway point. Removing the loaves mid-bake to brush them with egg white and add sugar sets a glossy, browned crust. Opening the oven too early or leaving them too long risks scorching the sugar before the centre is set.

Swap the caraway

How well each one fits the dish's main ingredients (almond, sugar, flour, egg, rose):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Carawaythe original
  4. Turmericfits less well

Fit is the average pairing score against almond, sugar, flour, egg, rose. Candidates are from the same food group and used in at least 100 recipes.
