Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large, clean pan, warm the butter until it is warm.

  3. Stir the butter around the sides of the pan until it becomes a smooth cream.

Make the batter

  1. Gradually add the sugar and mix together for a few minutes.

  2. Break the eggs into the pan one at a time, stirring continuously until all are added.

  3. Beat the mixture well for five minutes.

  4. Gently fold in the flour and any other ingredients.

Bake

  1. Quickly pour the batter into a prepared cake hoop lined with parchment paper.

  2. Bake in the oven until a skewer inserted comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and give a tender, rich crumb.
Sugar
Sweetens the cake and helps create a light texture when creamed with butter.
Eggs
Add structure, moisture and richness, and bind the batter together.
All-purpose flour
Provides the main structure that sets the cake as it bakes.

The step that matters

Gently fold in the flour. Overmixing once flour is added develops gluten, which makes the cake tough and dense. Folding gently keeps the batter light and airy.
