Souffle of Ground Rice

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. In a clean saucepan, combine the ground rice and milk, then boil while stirring constantly until thick.

  2. Remove from heat and stir in the egg yolks, sugar, butter, and salt. Mix well and let cool.

Fold and bake

  1. Once cooled, whisk the egg whites until stiff peaks form and gently fold them into the rice mixture.

  2. Pour the mixture into a mold or baking dish, dust the top with powdered sugar, and bake in a moderate oven at 350°F (175°C) until set.

  3. Optionally, flavor with essence of your choice before baking.

What each ingredient does

Ground rice
Thickens the milk into a stiff base that holds the soufflé's structure.
Egg whites
Whipped to stiff peaks, they lighten the mixture and help it rise in the oven.
Egg yolks
Add richness and help set the base as it bakes.
Butter
Adds fat for a softer texture and richer flavor.
Sugar
Sweetens the base and adds tenderness to the finished soufflé.

The step that matters

Folding the egg whites. Whisked whites trap air that makes the soufflé rise. Folding gently keeps that air in; stirring vigorously deflates the foam and leaves a dense result.
