Small Queen Cakes

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the pastry cream as directed in Part VII.

  2. Fill the small queen cake molds with the pastry cream.

  3. Mix the fine sugar with the egg white and a small amount of cochineal for color.

  4. Glaze the tops of the cakes with the sugar mixture.

  5. Bake in a gentle oven at 300°F (150°C) for about 20 minutes.
