What each ingredient does

Barberries
Provide the tart fruit flavor and the pectin-rich body that sets the jam.
Powdered sugar
Sweetens the jam and helps preserve it by reducing available water.

The step that matters

Pass the baked barberries through a sieve to remove skins.. Skins left in the jam can stay tough and separate from the smooth pulp. Pressing the soft fruit through a sieve gives an even texture and removes the fibrous parts.
