Whole Wheat Bread with Potatoes
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Boil and mash the potatoes, reserving the water used for boiling.
Combine the potato water with ½ gallon of milk to make 1 gallon of liquid.
Dissolve the yeast in the liquid, then add sugar, salt, and lard.
Mix to form a slack dough.
Let the dough rise until it doubles in size.
Scale and shape the dough into pans.
Allow the dough to prove, then bake in a preheated oven at 400°F (200°C).
Brush the bread with water when done.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
