Opera Buns

Oven, in the book's wordsA medium oven

Ingredients

Directions

The book says “a medium oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Shape the buns

  1. Roll out the dough into long flat strips, 10 inches wide and ¼ inch thick.

  2. Brush the strips with melted butter and sprinkle with powdered sugar.

  3. Roll up each strip into one long roll and flatten it.

  4. Brush the flattened rolls with butter, then cut into strips and place on pans, cut side up, so they touch on the sides.

Top and bake

  1. Wash the tops with milk and sprinkle with chopped blanched peanuts.

  2. Let the buns rise, then bake in a moderate oven at 350°F (175°C).

  3. Ice the buns once they are done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Standard dough
Forms the soft, rising structure that holds the buns together after baking.
Melted butter
Adds richness and helps the layers separate and brown in the oven.
Powdered sugar
Adds sweetness and a fine sugary layer inside the rolled dough.
Milk
Gives the tops a thin coat that promotes even browning.

The step that matters

Placing the cut strips on pans. Placing the cut side up and letting the buns touch on the sides controls their shape as they rise. Spacing them too far apart can make them dry out and brown unevenly.

Swap the peanut

How well each one fits the dish's main ingredients (butter, sugar, milk):

  1. Almondfits better
  2. Cocoafits better
  3. Pecansfits about as well
  4. Peanutthe original

Fit is the average pairing score against butter, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
