Cocoanut Buns

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Add 1 pound of freshly grated coconut and vanilla to 5 pounds of standard dough.

  2. Shape the dough into long ovals, pointed at the ends, and space them apart on the baking sheet.

  3. Allow the dough to rise until doubled in size.

  4. Wash the tops with water or egg wash.

Bake and finish

  1. Bake in a preheated oven at 400°F (200°C) until golden brown.

  2. In the last few minutes of baking, add some shredded coconut to the oven to toast.

  3. Once baked, ice the buns and sprinkle the toasted coconut on top before the icing sets.

What each ingredient does

Standard dough
Forms the soft, airy structure of the buns as it rises and bakes.
Freshly grated coconut
Adds moisture, chewiness and coconut flavour throughout the dough.
Shredded coconut
Toasting adds a nutty, browned flavour and crisp texture to the topping.

The step that matters

Toasting the shredded coconut. Coconut can scorch quickly because its sugars and fats brown fast at high heat. Adding it only in the last few minutes lets it toast to golden without turning bitter or burnt.
