Hungarian or Presburg Zwieback

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Shape the dough into long fingers, making the ends larger than the center, similar to ladyfingers.

  2. Proof the dough and bake at 400°F (200°C) until golden.

  3. Cut the zwieback in half and dry-toast it.

  4. Prepare a light meringue icing by beating the egg whites until stiff.

  5. Gradually add the powdered sugar and mix in the chopped almonds.

  6. Spread the icing on the toasted side of the zwieback.

  7. Return the zwieback to the oven to dry.
