Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Ferment with Compressed Yeast

Ingredients

Directions

Prepare the potato base

  1. Boil the potatoes until done.

  2. In a tub, combine a part of the boiling water with the potatoes and the flour. Scald well and mash to a fine, smooth paste.

  3. Add more water to thin it out and cool it to make a total of 10 quarts.

  4. Ensure the mixture is lukewarm, about 75°F (24°C).

  5. Strain the mixture and add the sugar and yeast.

Ferment

  1. Cover the tub tightly and let it sit undisturbed for 10 to 12 hours.

  2. For a quicker fermentation, raise the temperature to 95°F (35°C) and use more yeast to be ready in 5 to 6 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starch and body that give the dough its soft, moist texture.
Flour
Forms the paste structure that the yeast feeds on during fermentation.
Sugar
Feeds the yeast and adds a little sweetness and browning later.
Compressed yeast
Produces carbon dioxide during fermentation, making the dough rise and become airy.

The step that matters

Cool to lukewarm before adding sugar and yeast. Yeast is killed by boiling-hot liquid and works slowly when cold. Holding the mixture near 75°F lets the yeast become active and ferment evenly, so the dough rises properly.

Swap the potato

How well each one fits the dish's main ingredients (flour, sugar):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
