Why it works: Wheat and rye match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 404 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Half Rye Bread

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sponge

  1. In a large bowl, combine half a pail of water and the yeast to create a sponge at 75°F (24°C).

  2. Once the sponge is ready, add the remaining water, salt, and caraway seeds.

Shape and proof

  1. Mix in enough rye flour to form a medium firm dough.

  2. Let the dough rise until it has doubled in size, then punch it down.

  3. Scale and shape the dough into loaves, either long like Vienna bread or round.

  4. Allow the loaves to proof until they have risen again.

Bake and finish

  1. Before baking, wash the loaves with water and make a straight cut on each end.

  2. Bake in a preheated oven at 400°F (200°C) until golden brown.

  3. After baking, wash the loaves again with water or a cornstarch wash.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rye flour
Forms the dough's structure and gives the bread its characteristic flavor and dense crumb.
Yeast
Ferments the sponge and dough, producing gas that makes the dough rise.
Wheat flour
Builds the initial sponge, providing gluten that traps gas as the yeast works.
Caraway seeds
Adds a distinctive aromatic flavor that complements the rye.

The step that matters

Proofing the loaves until risen again. Proofing lets the yeast build gas in the shaped loaves so they expand in the oven. Underproofed loaves stay dense and may burst, while overproofed loaves collapse.
