Why it works: Rye and wheat match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 404 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Rye Bread with a Straight Dough

Ingredients

Directions

The book gives no oven temperature. The 650°F (343°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Dissolve the sour dough and yeast in the water.

  2. Add the coarse sea salt and caraway seed.

  3. Heat the water to 650°F (343°C).

  4. Mix two-thirds rye flour with one-third wheat flour to make a firm dough.

  5. Knead the dough well and let it rise until doubled in size.

  6. Work the dough again, then scale and mold it into loaves.
