Strawberry Kisses

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the meringue

  1. Beat the egg whites until nearly stiff.

  2. Gradually beat in the sugar, one handful at a time, until stiff peaks form.

  3. Stir in the remaining sugar and add strawberry flavoring or coloring.

Pipe, bake and cool

  1. Using a star piping tip, pipe the mixture onto well-greased and dusted baking sheets.

  2. Bake in a cool oven at 300°F (150°C) until set.

  3. Once baked and cool, gently remove from the pans.

What each ingredient does

Egg whites
Whipped egg white proteins form the foam that gives the kisses their airy structure.
Sugar
Sugar stabilizes the whipped foam and adds sweetness to the meringue.

The step that matters

Gradually beat in the sugar until stiff peaks form. Adding sugar slowly lets it dissolve into the foam, which stabilizes the whites. Adding it too fast or under-beating can leave a grainy, weepy, or collapsing meringue that will not hold its piped shape in the oven.

Swap the strawberry

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Strawberrythe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
