Ingredients

Directions

The book says “a medium oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Pare the apples and remove the cores using an apple corer.

  3. Roll out the puff pastry scraps to ½ inch thick.

  4. Cut out square pieces large enough to cover each apple.

  5. Place an apple in the center of each square and wrap the pastry tightly around it.

  6. Place the dumplings on a baking pan with the closed ends down.

  7. Brush the tops with egg wash.

  8. Bake in the preheated oven until golden brown.

  9. Serve warm with cream and sugar.
