What each ingredient does

Egg albumen
Beaten into a stiff foam that gives the nougat its light, airy structure.
Sugar
Provides sweetness and, once boiled, forms the firm candy body that sets when cooled.
Glucose
Inhibits sugar crystallization, keeping the nougat smooth and chewy rather than grainy.
Almonds
Add texture and a nutty flavor that contrasts with the sweet, soft candy.

The step that matters

Boiling the sugar syrups to temperature. The final boiling temperature controls how much water remains in the candy, which determines whether the nougat sets firm or stays soft. Small temperature errors noticeably change the texture.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
