Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. In a bowl, combine granulated sugar and almond paste.

  2. Whip in the egg whites until well mixed.

  3. Fold in the blanched peanuts until evenly distributed.

Shape and bake

  1. Scoop out walnut-sized portions and place them on parchment paper.

  2. Bake in a slow oven at 300°F (150°C) until set.

  3. Allow to cool before removing from the paper.

What each ingredient does

Egg whites
Bind the mixture and help the cookies set as they bake.
Almond paste
Adds moisture, chewiness and a rich almond flavor to the dough.
Granulated sugar
Sweetens the dough and helps the cookies brown and crisp at the edges.
Blanched peanuts
Provide crunch and bulk, giving the cookies their main texture.

The step that matters

Bake in a slow oven until set. Baking at a low temperature dries the cookies gradually so they set and crisp without browning too fast. Removing them too early leaves them soft and sticky, while overbaking makes them hard and dry.

Swap the peanut

How well each one fits the dish's main ingredients (sugar, almond, egg):
