Meringue Cases with Ice

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 300°F (150°C).

  2. Whisk the egg whites in a bowl until stiff peaks form.

  3. Gradually add the sugar, mixing well.

  4. Spoon the mixture onto a buttered paper in egg-shaped portions.

  5. Dredge pounded sugar over the meringues and let rest for a minute.

  6. Bake until pale yellow, then remove the insides carefully with a spoon.

  7. Return the hollowed meringues to the oven to dry and harden.

  8. In a separate bowl, mix the custard with maraschino and whip to a froth.

  9. When half-frozen, fold in the whipped cream and meringue.

  10. Fill the meringue cases with the ice and sprinkle with crushed ratafias before serving.
