Madeira Cake

Ingredients

Directions

  1. Beat the iced butter and sugar together until creamy.

  2. Separate the eggs, placing the whites in one bowl and the yolks in another, ensuring freshness.

  3. Beat the yolks until light and frothy, and whisk the whites until stiff peaks form.

  4. Chill the prepared eggs in the refrigerator until needed.

  5. Pound the bitter and sweet almonds with rose water into a paste, using three bitter almonds for every ounce of sweet almonds.

  6. Mix the almond paste with the other ingredients.

  7. Use spices sparingly, as too much can spoil the cake.
