Pan Taffy and Chewing Taffy

Ingredients

Directions

Make the taffy base

  1. Combine sugar, glucose, and water in a large pot and cook until the mixture reaches 280°F (140°C).

  2. Add cream while stirring and continue cooking until it reaches a crack stage when tested in cold water.

  3. Pour the mixture onto a greased slab to cool.

Pull and shape

  1. Once partly cool, pull the taffy using a machine until light and fluffy, then flavor with vanilla.

  2. Dust a clean slab with powdered sugar and stretch the taffy into a thin sheet.

  3. Cut the taffy to fit your pan and let it cool completely on the slab before packing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides the bulk of the sweetness and forms the crystalline structure of the taffy.
Glucose
Inhibits crystallization so the taffy stays smooth and chewy rather than grainy.
Cream
Adds fat and milk solids that soften the texture and give a richer, chewier bite.
Nucoa butter
Adds fat that tenderizes the texture and contributes a rich, smooth mouthfeel.

The step that matters

Cooking to the crack stage. Sugar syrup must reach the correct concentration to set firm but pullable. Undercooked taffy stays sticky and soft, while overcooked taffy becomes hard and brittle. Watch the temperature and the cold-water test closely.
