Explore the science

What each ingredient does

Supercarbonate of soda
Reacts with the acid in water to release carbon dioxide, which carbonates the liquid.
Tartaric acid
Reacts with the soda to release carbon dioxide and gives the water a sharp, tart taste.
Sugar
Coats the powders so they react gradually in the water rather than all at once.

The step that matters

Close the keg immediately. The soda and acid release carbon dioxide as they dissolve. Carbon dioxide dissolves into water only under pressure, so leaving the keg open lets the gas escape and the water stays flat.
