What each ingredient does

Dressed fish
Forms the main body of the croquettes and gives them their flavour.
Egg
Binds the minced fish together and creates a coating that helps crumbs stick.
Flour
Helps bind the mixture and gives it a firmer texture.
Bread crumbs
Form a crisp outer coating that browns when fried.

The step that matters

Frying the croquettes in hot oil. If the oil is not hot enough, the coating absorbs oil and turns greasy instead of crisp and golden. Frying in hot oil seals the crumb coating quickly, keeping the inside moist and the outside crisp.
