Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air and give a tender, rich crumb.
Egg whites
Whipped to a foam, they lift the batter and give the cake its airy structure.
Powdered sugar
Sweetens the cake and helps the creamed butter hold air, giving a fine texture.
Cake flour
Low-protein flour that sets into a soft, delicate crumb.
Strong flour
High-protein flour that adds gluten for extra structure and strength.
Baking powder
Releases gas in the batter, helping the cake rise in the oven.

The step that matters

Mix lightly but thoroughly. Once the flours are added, overmixing develops gluten and deflates the whipped egg whites, leaving the cake dense and tough instead of light.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, butter, egg, flour):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against sugar, butter, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
