Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Bake the puff pastry until golden and about ½ inch thick.

  2. Spread the surface with your choice of jelly or marmalade.

  3. Neatly spread the meringue mass over the jelly.

  4. Use a piping bag to decorate the meringue as desired.

  5. Sift powdered sugar lightly over the meringue.

  6. Bake in a moderate oven at 350°F (175°C) until lightly fawn colored.
