What each ingredient does

Sugar
Forms the caramel base and provides the sweetness and firm candy structure as it cooks.
Sweet cream
Adds fat and moisture, giving the candy a softer, creamier texture.
Cream of tartar
Acid that helps prevent sugar crystals from forming, keeping the candy smooth.
Chopped nuts
Add crunch and a toasted, nutty flavor to the finished candy.

The step that matters

Boil to the hard ball stage. Sugar syrup must reach the correct temperature to set firm when cooled. Too little cooking leaves the candy soft and sticky, while overcooking makes it hard and brittle.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, cream):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
