What each ingredient does

Sugar
Forms the sweet, hard candy base as it cooks to a glassy set.
Glucose
Inhibits sugar crystallization, keeping the candy smooth rather than grainy.
English walnut meats
Provide the nutty flavor and crunchy texture throughout the candy.

The step that matters

Boil to 290°F (143°C) hard crack stage. Sugar candy sets firm only when cooked to the hard crack range. Undercooked mixture stays sticky, while overcooking turns it bitter and brittle.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, meat):

  1. Almondfits about as well
  2. Chestnutfits about as well
  3. Pecansfits about as well
  4. Walnutthe original

Fit is the average pairing score against sugar, meat. Candidates are from the same food group and used in at least 100 recipes.
