Ingredients

Directions

The book gives no oven temperature. The 250°F (121°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the nougat

  1. Dissolve sugar and glucose in water and cook to 250°F (121°C).

  2. Pour half of the mixture in a fine stream over the beaten egg whites.

  3. Cook the remaining half to 286°F (141°C) and pour it in a fine stream over the first mixture while stirring continuously.

  4. Add the chopped French fruits, walnuts, pecans, almonds, and vanilla flavor; stir until thick.

Shape and finish

  1. Pour the mixture onto a slab and weigh off 2 oz for each piece.

  2. Shape each piece into an oval like an egg and dip in melted bitter sweet chocolate.

What each ingredient does

Sugar
Provides sweetness and, when cooked, the firm sugar structure of the nougat.
Glucose
Inhibits sugar crystallization, keeping the nougat smooth and chewy rather than grainy.
Egg whites
Whipped to foam, they give the nougat its light, airy structure.
French fruits
Add moisture, sweetness and chewy texture to the nougat.
English walnuts
Add crunch and nutty flavor throughout the nougat.

The step that matters

Pouring the hot syrup over the egg whites. The syrup must be poured in a fine, steady stream while stirring. Pouring too fast or unevenly can deflate the whites or cook them unevenly, and the syrup's temperature controls the final chewiness of the nougat.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, egg, pecans, almond, vanilla, chocolate):

  1. Hazelnutfits better
  2. Macadamia nutfits better
  3. Pistachiofits better
  4. Walnutthe original

Fit is the average pairing score against sugar, egg, pecans, almond, vanilla, chocolate. Candidates are from the same food group and used in at least 100 recipes.
