What each ingredient does

Sugar
Provides the bulk of the sweetness and, as it cooks, the firm body of the taffy.
Glucose
Inhibits sugar crystallization, keeping the taffy smooth and chewy rather than grainy.
Cream
Adds fat and milk solids for a soft, creamy texture and a rich flavor.
Butter
Adds fat for richness and a tender, smooth bite.
Gelatin
Adds elasticity so the cooked candy stretches and holds its shape when pulled.

The step that matters

Cooking to 252°F (122°C) after adding the butter. Sugar syrup temperature sets the final firmness of taffy; cooking too far makes it hard, while stopping early leaves it soft and sticky. Hitting the stated temperature controls the texture.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, cream, butter, gelatin):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Tarragonfits less well
  4. Gingerfits less well

Fit is the average pairing score against sugar, cream, butter, gelatin. Candidates are from the same food group and used in at least 100 recipes.
