Almond Paste

Ingredients

Directions

Prepare the almonds

  1. Blanch the almond nuts and cover them with water in a vessel. Let them stand for 4 to 5 hours.

  2. Drain the almonds, then pound and rub them into a smooth paste in a mortar, adding a little orange flower water to prevent oiling.

Make the paste

  1. In a pot, cook the sugar over heat until it reaches a crack stage.

  2. Remove the pot from the heat and add the almond paste, stirring continually until the mixture cools.

  3. Transfer the paste into a crock for storage.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almond nuts
Form the bulk of the paste, providing body, fat and the characteristic flavor.
Sugar
Sweetens the paste and, cooked to crack stage, helps it set firm as it cools.
Orange flower water
Added during pounding to help keep the paste from releasing its oil.

The step that matters

Stirring the sugar mixture while it cools. Stirring continually keeps the mixture smooth and evenly cooled, preventing sugar from crystallizing into grainy lumps and helping the paste set uniformly.

Swap the nuts

How well each one fits the dish's main ingredients (almond, sugar, orange):

  1. Pistachiofits better
  2. Brazil nutfits better
  3. Cashew nutfits better
  4. Nutsthe original

Fit is the average pairing score against almond, sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
