Why it works: Almond and pistachio match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 693 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Dipped Bonbons

Ingredients

Directions

  1. Heat the cream in a porcelain dipper placed in a water jacket until the water boils.

  2. Stir the cream with a small spatula until it reaches the consistency of milk cream.

  3. Set the dipping pot on a table with centers to dip on the left and a clean sheet of tin on the right.

  4. Dip a center into the cream using a wire ladle or fork, then place it on the sheet of tin.

  5. Allow the dipped centers to harden before handling.

What each ingredient does

Cream
Forms the coating that hardens around each center, giving the bonbons their outer shell.
Almond paste
Forms the soft, rich center that the cream coating encloses.

The step that matters

Keep the cream at milk-cream consistency. Cream that is too thick clings unevenly and forms lumps, while cream that is too thin runs off the center. Stirring over gentle heat keeps it fluid and evenly coating, and the dipped centers must be left to set undisturbed so the coating hardens properly.
