What each ingredient does

Chocolate
Provides the chocolate flavor and the body of the syrup once dissolved in the water.
Sugar
Adds sweetness and thickens the liquid into a syrup as it dissolves.

The step that matters

Skim off any grease that forms on top. Chocolate contains fat that separates and rises as the mixture cools. Removing it before adding sugar keeps the syrup smooth and prevents a greasy film or slick texture.
