What each ingredient does

Pure strawberry juice
Supplies the main strawberry flavour and aroma of the syrup.
Sugar
Provides sweetness and body, and helps preserve the syrup by binding its water.
Gelatin
Adds a slightly fuller body and mouthfeel to the thin fruit liquid.
Citric acid
Adds acidity that balances the sweetness and sharpens the strawberry flavour.

The step that matters

Stir in the sugar until fully dissolved. Undissolved sugar can settle or form crystals as the syrup cools, leaving a grainy texture and an uneven sweetness throughout the batch.

Swap the strawberry

How well each one fits the dish's main ingredients (gelatin, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Strawberrythe original

Fit is the average pairing score against gelatin, sugar. Candidates are from the same food group and used in at least 100 recipes.
