Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and body, and helps preserve the syrup.
Strawberry juice
Supplies the main strawberry flavor and aroma.
Gelatin
Adds slight body to the syrup, giving it a fuller mouthfeel.
Citric acid
Adds tartness that balances the sweetness and brightens the strawberry flavor.

The step that matters

Skimming off the scum after removing from heat. Scum rising on the hot syrup is impurities and foam; removing it before straining keeps the syrup clear and clean-tasting.
