Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the syrup and lowers the freezing point so the granita stays grainy rather than rock-hard.
Strawberries
Provide fruit flavour, colour and texture, with pieces stirred in at the end for bite.
Strawberry juice
Concentrates strawberry flavour and colour throughout the frozen base.
Orange juice
Adds acidity and bright citrus aroma that balances the sweetness.

The step that matters

Dipping the strawberries in the hot syrup. Leaving them in the hot syrup too long softens their cell walls, making them mushy and dulling their colour. A brief dip with a perforated ladle warms them while keeping them firm enough to stir in later.

Swap the orange
