Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the sweet base that sets into a brittle, glossy candy when cooked.
Vinegar
Adds a little acidity that helps prevent the sugar from recrystallizing into grainy crystals.
Gum arabic
Stabilizes the syrup so it stays smooth and resists crystallizing.
Water
Dissolves the sugar so it can be heated evenly before cooking.

The step that matters

Pulling the candy until it turns white. Pulling incorporates air and cools the sugar mass, forming tiny crystals that make the candy opaque and white rather than clear. Pulling too early or too late changes its texture.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Pineapplefits about as well
  4. Apricotfits about as well

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
