Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Barberry Jelly
Ingredients
Directions
Prepare
Pick the barberries from their stalks and weigh them.
Add enough water to the sugar to make a syrup.
Make the jelly
Put in the barberries and boil until the syrup reaches the pearl stage, skimming off any scum that rises.
Strain the mixture through a fine sieve, pressing the berries to extract as much juice as possible.
Return the syrup and juice to a pan, then return it to the fire and finish as you would apple jelly.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

What each ingredient does
- Barberries
- Provide the tart fruit flavour and the natural pectin and acid that help the jelly set.
- Loaf sugar
- Sweetens the jelly and, when boiled to a syrup, helps it thicken and set.
The step that matters
Boiling to the pearl stage. Sugar syrup must be boiled to the right concentration for the jelly to set. Boiling too briefly leaves it runny, while overcooking makes it stiff. Skimming removes scum that would cloud the jelly.
