Make the nut paste

  1. Pound the nuts in a mortar with a few drops of rose water, 1 cup of sugar, and 1 cup of cream to make a smooth paste.

  2. Color the paste pale green with spinach or other coloring.

Freeze and finish

  1. Freeze the mixture using either Philadelphia or Neapolitan style, then add the nut paste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Adds richness and fat, giving the ice cream a smooth, creamy texture.
Granulated sugar
Sweetens the base and keeps the frozen texture softer by lowering the freezing point.
Fresh milk
Provides liquid and milk solids that form the body of the ice cream base.
Pistachio nuts
Supply the main flavor and pale green color of the ice cream.

The step that matters

Freeze the mixture, then add the nut paste. The nut paste is added after freezing begins, so it is not overworked or melted into the base. Adding it too early can change the texture and color unevenly.

Swap the nuts
