Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets into a light body that gives the frozen ice cream a smoother, firmer texture.
Cream
Adds fat, which makes the ice cream rich and creamy and softens the ice crystals.
Sugar
Sweetens the mixture and lowers the freezing point, keeping the ice cream scoopable.
Milk
Supplies water and milk solids that form the body of the base.

The step that matters

Cool without letting it set. Gelatin that sets before it is mixed in forms lumps and does not blend evenly. Keeping it liquid until it is added lets it disperse through the base and give an even texture after freezing.

Swap the cocoa

How well each one fits the dish's main ingredients (milk, sugar, cream, gelatin):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits better
  4. Cocoathe original

Fit is the average pairing score against milk, sugar, cream, gelatin. Candidates are from the same food group and used in at least 100 recipes.
