Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the main flavour and fruit pulp that gives the ice cream its body.
Gelatin
Sets with the liquid to give the ice cream a firmer, smoother structure.
Granulated sugar
Sweetens the mixture and helps keep the ice cream soft when frozen.
Milk
Adds liquid and milk solids that give a creamy, mellow base.
Cream
Adds fat that makes the ice cream rich and smooth in texture.

The step that matters

Skim off any acid that rises. Cooking the peaches with sugar brings acid and impurities to the surface as a foam. Skimming them off keeps the flavour clean and the fruit tasting fresh rather than sharp.

Swap the peach

How well each one fits the dish's main ingredients (gelatin, sugar, milk, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Coconutfits about as well

Fit is the average pairing score against gelatin, sugar, milk, cream. Candidates are from the same food group and used in at least 100 recipes.
