Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the mixture as it freezes, giving the sherbet a firm, smooth body.
Sugar
Adds sweetness and softens the frozen texture so the sherbet is not rock hard.
Grapefruit
Supplies the main flavour, bright acidity and aroma, plus juice that adds moisture.

The step that matters

Dissolve the soaked gelatin in the boiling syrup.. Gelatin only sets properly when it is fully dissolved. Undissolved granules leave rubbery specks and an uneven set in the frozen sherbet.

Swap the grapefruit
