Directions

Make the coconut base

  1. In a copper kettle or granite vessel, combine shredded coconut and cold water.

  2. Cook over moderate heat, stirring constantly with a wooden paddle for 15 minutes.

  3. Immediately pour the mixture into a stoneware jar and cover it.

Sweeten and freeze

  1. Once lukewarm, strain the mixture and add ½ pound of powdered sugar for each quart of liquid, stirring until dissolved.

  2. When cold, add the whites of 8 eggs (do not beat) and freeze.

What each ingredient does

Shredded coconut
Gives the sherbet its coconut flavor and body as it cooks into the liquid.
Powdered sugar
Adds sweetness and softens the texture of the frozen sherbet by lowering its freezing point.
Egg whites
Add foam-forming proteins that give the frozen sherbet a lighter, airier texture.

The step that matters

Adding the egg whites without beating. Egg whites whipped before freezing would trap air and change the texture unpredictably; adding them unbeaten and cold keeps the sherbet dense and smooth as it freezes.
