Why it works: Condensed milk and cocoa butter share more aroma than cooks usually use. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
French Chewing Taffy
Ingredients
Directions
Make the taffy base
In a large pot, combine sugar, glucose, condensed milk, butter, dissolved gelatin, and cocoa butter.
Cook the mixture over medium heat until it reaches 260°F (127°C).
Pull and shape
Remove from heat and pull the taffy while flavoring it with your choice of vanilla, chocolate, strawberry, lemon, peppermint, or rose.
Shape the taffy into a round lump and place it on a large counter pan or in a candy pail lined with muslin.
Break the taffy into pieces for sale.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

What each ingredient does
- Sugar
- Provides the main sweetness and the bulk of the candy's structure as it sets.
- Glucose
- Keeps the candy from crystallising, giving a smoother, chewier texture.
- Condensed milk
- Adds milk solids for a soft, creamy flavour and colour.
- Butter
- Adds fat for a tender, less brittle chew and richer flavour.
- Powdered gelatin
- Adds elasticity so the pulled taffy stays chewy rather than crumbly.
- Cocoa butter
- Adds fat that softens the chew and gives a smooth mouthfeel.
The step that matters
Cooking to 260°F (127°C). This temperature sets how much water remains in the sugar syrup. Undercooking leaves the taffy soft and sticky, while overcooking makes it hard and brittle.
