Brown Bread

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. In a large bowl, combine whole meal flour and salt.

  2. Dissolve yeast in warm water and add to the flour mixture.

  3. Knead the dough until smooth and elastic.

  4. Let the dough rise in a warm place until doubled in size.

  5. Shape the dough into a loaf and place it in a greased loaf pan.

  6. Allow it to rise again until it reaches the top of the pan.

  7. Bake in a preheated oven at 400°F (200°C) for 30-35 minutes or until golden brown.
