Directions

Prepare the seeds

  1. Place celery seeds in a pan over a warm chafing dish.

  2. Pour syrup over the seeds and work them with your hands.

  3. Dry the seeds in the stove for 34 to 48 hours.

Coat and dry

What each ingredient does

Celery seeds
Form the centre that each layer of sugar is built around.
Syrup
Dissolves and recrystallises as thin sugar layers that build up the candy coating.
White sugar
Provides sweetness and forms the hard, crisp outer sugar shell as it dries.
Gum senegal
Helps the sugar layers adhere evenly to the seeds for a smooth coating.

The step that matters

Drying well between each coating. Each syrup layer must dry fully before the next is added. If it stays damp, the sugar can become sticky, uneven or cloud, and the layers may not bond to the seeds.

Swap the celery

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Nutmegfits better

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
