Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Pigeon Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pigeons

  1. Cut the points off the wings and legs of the pigeons.

  2. Slice each pigeon into three pieces and remove the liver and back.

  3. Slit the breast piece and remove the bone.

  4. Chop the livers with parsley and mushrooms, then spread on each pigeon piece.

Layer and bake

  1. Cut the rump steak into slices, beat them, and layer in the bottom of a dish.

  2. Add a layer of pigeon, seasoning with pepper and salt, and repeat layers.

  3. Pour in the stock and add the hard-boiled eggs cut into quarters.

  4. Cover with puff pastry and bake at 350°F (175°C) for 1 hour and 45 minutes.

  5. Fill the pie with gravy made from the heads, bones, and stock.

  6. Stick the feet out of the top of the pastry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which becomes tender during the long bake.
Rump steak
Adds meaty body and richness to the layers beneath the pigeon.
Hard-boiled eggs
Add firm texture and richness to the filling.
Puff pastry
Forms a crisp, browned, flaky crust over the pie.
Mushrooms
Add earthy flavour and moisture to the chopped liver topping.

The step that matters

Covering with pastry and baking. The pastry must seal the dish well so steam stays inside and the meat cooks through slowly; a long, moderate bake softens the pigeon and keeps the filling moist while the crust browns.

Swap the parsley

How well each one fits the dish's main ingredients (egg, mushroom, pepper):

  1. Parsleythe original
  2. Thymefits about as well
  3. Marjoramfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against egg, mushroom, pepper. Candidates are from the same food group and used in at least 100 recipes.
