Ingredients

Directions

Make the cream base

  1. Dissolve the gelatine in hot water.

  2. In a large bowl set on ice, beat the cream, removing the froth until only ½ pint remains.

  3. Add the powdered sugar and flavoring to the remaining cream.

  4. When the gelatine is lukewarm, strain it into the cream mixture and stir until it begins to thicken.

Mold and chill

  1. Fill the molds with the mixture and refrigerate until ready to serve.

What each ingredient does

Cream
Whipped into a light foam that gives the dessert its airy, creamy body.
Gelatine
Sets the whipped cream so it holds its shape when molded and chilled.
Powdered sugar
Sweetens the cream and dissolves easily into it without graininess.

The step that matters

Stirring the gelatine into the cream. If the gelatine is too hot it can deflate the whipped cream, and if it is too cold it sets in lumps. Waiting until it is lukewarm and stirring until the mixture just begins to thicken helps it blend evenly and keeps the foam light.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
