Strawberry or Raspberry Jelly
Ingredients
Directions
Extract the juice
Place the fresh fruit on low heat until the juice flows slowly, about 20 minutes.
Once the juice is clear, strain it through a jelly bag without pressing.
If the juice is cloudy, strain it again through muslin into a pan.
Make the jelly
Simmer the juice for 30 minutes.
Add 1 lb of sugar for each pint of juice and boil for an additional 10 minutes.

What each ingredient does
- Strawberries or raspberries
- Provides the juice and fruit flavor that the jelly is made from.
- Sugar
- Sweetens the juice and, once boiled, helps the jelly set and keep.
The step that matters
Strain the juice without pressing. Pressing the bag pushes fine pulp and solids through with the juice, which makes the finished jelly cloudy. Letting it drip on its own keeps the jelly clear.
