Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Process of Yeast

Ingredients

Directions

Make the starter

  1. In a pint vial, combine 2 ounces of powdered sugar, 1 tablespoon of malt, and a little ginger.

  2. Fill the vial halfway with warm water and stir well.

  3. Place the vial in a warm location (not below 60°F) and let it sit undisturbed for 48 hours.

Finish the yeast

  1. After 48 hours, add enough flour to create a very thin paste.

  2. Let it stand for an additional 24 hours to complete the yeast preparation.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered sugar
Provides food for the yeast to feed on and grow.
Malt
Supplies sugars and nutrients that feed the yeast during fermentation.
Flour
Gives the yeast a thin paste base of starch to ferment in.

The step that matters

Keeping the vial warm and undisturbed. Yeast activity slows sharply in cool conditions, so the vial should stay warm, not below 60°F, and be left still for the full 48 hours so the fermentation can establish properly.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, malt, flour):

  1. Cinnamonfits better
  2. Jalapenofits better
  3. Turmericfits about as well
  4. Gingerthe original

Fit is the average pairing score against sugar, malt, flour. Candidates are from the same food group and used in at least 100 recipes.
